Some addresses are not to be missed - La Maison Gastellou is one of them. Behind the shop window, the very finest of local products: cold sausages, patés, "axoa", "piperade" and many "amatxi" specialities (ie. grandmother, in the Basque language). Not forgetting cured ham from the Poutzia farm whose pigs, raised in the open air in Saint-Jean-le-Vieux, are widely renowned. It is not by chance that La Maison Gastellou has paired breeders' traditions with a passion for cold meats for almost 50 years. In short, a quick visit will mean rising somewhat in altitude. But above all, the certainty of tasting some of the many delights offered by the Basque country.
